Weekly Gluten-free Dinner for Two #1



MONDAY

Ingredients:

2 fillets of salmon

1 tablespoon of Mirin (sweet rice wine), to marinate
1 tablespoon of corn flour, to coat
1/2 teaspoon of garlic powder
Some salt & pepper

1/2 cucumber, diced
Some tomatoes, sliced
Some frozen broccolis

(Available from ASDA for 74p)

TUESDAY
Dinner: Minced beef & pork penne

Ingredients:

1 tablespoons of olive oil
1 small onion, diced
250g of minced beef & pork
4 mushrooms, sliced
Some salt & pepper to taste

1 tablespoon of soy sauce
1 tablespoon of Mirin (sweet rice wine)
1 teaspoon of garlic powder
1 teaspoon of brown sugar

150ml of milk

Handful of mixed cheese 

Some fresh basil
Some tomatoes
Some frozen broccolis

WEDNESDAY
Dinner: Japanese style chicken ketchup rice & scrambled eggs

Ingredients:

Ketchup rice
130g of Easy Cook Basmati Rice, to be boiled*
1 cube of chicken stock

*Using paella or risotto rice instead of basmati rice would make it much more similar to Japanese chicken ketchup rice:)

1 tablespoon of olive oil
4 chunks of frozen diced chicken breast, fried
1 small onion, diced
Handful of frozen mushrooms
Handful of frozen peas

2 tablespoons of tomato puree or ketchup
1 tablespoon of soy sauce
1 tablespoon of Mirin (sweet rice wine)
1 teaspoon of garlic powder
1/2 teaspoon of brown sugar
A pinch of salt & pepper

Scrambled eggs
Another tablespoon of olive oil, in a separate pan
2 medium eggs
1 + 1/2 tablespoon of milk
1 tablespoon of soy sauce*
1 tablespoon of Mirin*
1/2 teaspoon of brown sugar*
A pinch of salt & pepper

* These can be omitted :)

Some tomatoes & broccolis

THURSDAY
Dinner: Roast chicken with baked potatoes + veggies

Ingredients:

2 fillets of chicken breast
Some leaves of fresh basil

8 British baby potatoes
8 cherry tomatoes
4 mushrooms, sliced
Some frozen broccolis

A couple tablespoons of olive oil

FRIDAY
Dinner: Japanese style GF curry

Ingredients:

200g of paella rice, to be steamed
500ml of water
1 tablespoon of Mirin (sweet rice wine)

Some frozen broccolis, defrosted
5 British baby potatoes, cut in quarter, microwaved until soft

10g of butter
1 tablespoon of grated garlic
1 tablespoon of ginger
2 small onions, sliced

2 tablespoons of GF curry powder
1 tablespoon of GF white flour
1 tablespoon of soy sauce
1/2 of apple, grated
A pinch of salt

A couple tablespoons of olive oil

SATURDAY
Dinner: Toasties!

Ingredients:

Some butter

2 rushes of bacon

1 medium size tomatoes, sliced
Some grated mozzarella cheese
Some mayonnaise
Some salt & pepper to taste

SUNDAY
Dinner: Sunday Roast (Beef) @ Earth and Stars !
Yorkshire pudding & gravy in this picture contains gluten but they can also make GF gravy for you :)
Staffs there were all very attentive and lovely too!

Earth and Starts in Brighton is one of the rare pubs that serve tapped gluten-free beer :)
And of course, our first beer & alcohol ever in a very long time made us more than tipsy after all...:)

SNACK OF THE WEEK
Ridiculously Easy-Cheap-Delicious Popcorn! (+ it's high in fiber!)

Ingredients:

100g of wholefoods popcorn

& add your favourite seasoning!
What I used here is...
ASDA's Sweet & Salty Popcorn Seasoning :)




Voila! Loads of popcorn only for 25p! :)
