Recipe # 9 - Gluten-free Rice flour & Oats Chocolate chip Cookies

Gluten-free Rice flour Chocolate chip cookies

Tastes like shortbread! :) さくさく+ほんのりしっとりのカロリーメイトみたいな食感です.゚+.(o´∀`o)゚+.゚

Gluten-free Rice flour & Oats Chocolate chip Cookies (20 cookies)
米粉のチョコチップクッキー (20枚)




200g of gluten-free rice flour*
80g of gluten-free porridge oats**

1 tablespoon of milk
1 teaspoon of xanthan gum
1 teaspoon of baking powder
A pinch of salt

100g butter
100g sugar
1 egg
1 teaspoon of vanilla extract

60g of chocolate chips

* The product I used is Doves Rice Flour :)
Ingredients:  Brown rice and white rice.

** Here I used ASDA Free from Pure Porridge Oats :) They are absolutely amazing!
But this can be omitted for minimising cost & calories :)




1. Combine all the dry ingredients

2. In another bowl, mix together sugar & butter, combine them well

3. Add egg, milk and vanilla extract, and mix until well-blended

4. Add the liquid mixture into the dry mixture...

5. Then add chocolate chips and try distributing evenly :)

6. Using spoons or ice cream scoop, equally divide the dough into more or less 20 chunks

7. With lightly oiled hands, shape them into whatever forms you would prefer :)
Could be more flattened as the shape here will be likely to stay as it is :D
8. Bake in the pre-heated oven (190℃) for 15 minutes or until it's lightly golden brown! :)

Here's an awfully uneven distribution of chocolate chips! :D

Alright, this seems not that bad considering gluten-free chocolate chip cookies in the market are fairly expensive. And just a piece makes us quite satisfied. But this would be more reasonable without adding gluten-free oats :)

2501kcal :20 cookies (125kcal/per cookie)


Doves Rice flour (200g): 714kcal
Anchor Spreadable Butter (100g): 696kcal
ASDA Gluten-free Porridge Oats (80g): 300kcal
Granulated Sugar (100g): 400kcal
Dr. Oetker Milk Chocolate Chips (60g): 315kcal
1 Large Egg (50g): 78kcal
Semi-skimmed Milk (15g): 8kcal

Ok. I've been making homemade cookies but this is my first time to actually calculate the calories by adding up nutrition information on each package.
This ended up much more than I thought this would be because these cookies certainly do taste rather healthy compared with other excessively sweet ones!
But eating just 16 pieces of them would make up for all the calories required for an adult in a day...how is it possible...:D
At least a piece or two of these fill us up quite well so that we don't have to eat loads :)

Nonetheless, these are absolutely lovely gluten-free treats for a nice afternoon tea break :)
